Peanut Butter Sandwich Cookies with White Chocolate Ganache

A fluffy ganache of white chocolate and peanut butter is sandwiched between soft peanut butter cookies to create the ultimate dessert sandwich. Dip in melted chocolate for a finishing touch.
PEANUT BUTTER COOKIES
Ingredients
1-¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
½ cup creamy peanut butter
¾ cup packed brown sugar
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
¼ cup peanuts, chopped
Directions
Preheat oven to 350°F. In a bowl, mix together flour, baking soda and salt. Set aside.
Using a stand mixer, cream together butter and peanut butter. Add brown and granulated sugars and beat until light and fluffy. Add egg and vanilla. Mix to combine.
Turn the mixer to low and add flour mixture in batches. Stir in peanuts.
Scoop dough using a tablespoon and place on a lined baking sheet, leaving about an inch in between. Bake 10-12 minutes and set on a rack to cool.
WHITE CHOCOLATE GANACHE
Ingredients
6 oz. white chocolate, roughly chopped
2 oz. heavy cream
¼ cup creamy peanut butter
Directions
Place white chocolate and cream in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 20 seconds until melted and smooth. Let cool until ganache is firm.
Place ganache in the bowl of a stand mixer and add peanut butter. Whip on high until light and double in size.
ASSEMBLE COOKIE SANDWICHES
Spread a tablespoon of ganache onto the bottom of a cookie and sandwich with a second cookie. Repeat.
If desired, dip in melted chocolate and top with crushed peanuts.
