Grilled Peach and Burrata Salad

Burrata is a mellow-tasting cheese with a hard exterior and a soft, creamy interior. We pair it with the bright flavours of roasted peach and mint to celebrate the season.
SALAD
Ingredients
2 large peaches
arugula
mint leaves
prosciutto
burrata cheese
pesto for garnish
VINAIGRETTE
Ingredients
3 Tbsp olive oil
1 Tbsp vinegar (apple cider or sherry)
salt and pepper to taste
DIRECTIONS
Slice peaches in half and remove pits.
Preheat a grill pan or grill and rub with vegetable oil to prevent peaches from sticking.
Grill peaches for 5-7 minutes on each side or until charred.
Meanwhile, combine all vinaigrette ingredients.
In a large bowl, combine arugula and a small amount of separated mint leaves.
Drizzle with vinaigrette and toss to coat.
Place on a serving plate.
Top with grilled peaches and prosciutto.
Spoon burrata onto salad and garnish with pesto.
Season with fresh cracked pepper. OH
