Gin Pomegranate Cocktail

INGREDIENTS
2 ounces gin
1 ounce pomegranate juice
1 ounce orange juice
½ ounce thyme honey syrup*
*To make thyme honey syrup, heat equal parts honey and water in a pan with a sprig of thyme. Bring to a simmer and let thyme infuse until cool.
INSTRUCTIONS
Combine all ingredients into a cocktail shaker with ice. Shake until cool and strain over ice.
Garnish with a thyme sprig and thick zest of orange peel.
Optional: With a butane torch, heat the thyme sprig until smoking. OH
