Baked Salmon in Parchment Paper

Prepare salmon in a parchment packet full of flavour! As your salmon bakes, the steam keeps the fish moist and infused with flavour.
INGREDIENTS
(Serves 4)
4 salmon fillets, skin removed
2-3 large potatoes, thinly sliced
Fresh dill, or herbs of choice
¼ cup sundried tomatoes, sliced
¼ cup olives, pitted and sliced
¼ cup artichokes, sliced
HOW-TO
Preheat oven to 350˚F.
Prepare four sheets of parchment paper twice the size of the salmon. Fold each sheet in half.
On one side of the parchment paper lay 6-8 slices of potatoes. Place salmon on top.
Top with dill or other herbs, sundried tomatoes, olives and artichokes. Drizzle with olive oil.
Turn parchment paper over to create a pocket and fold in all sides to seal.
Repeat with each piece of salmon.
Place pockets on a baking sheet and bake 20-25 minutes at 350˚F, or until salmon is cooked. Serve with salad. OH
