Apricot Iced Tea

This refreshing iced tea is flavoured with a fresh apricot honey syrup!

INGREDIENTS

(Serves 4)

1 cup honey

1 cup water

1 cup apricots, pitted and sliced

2 bags of black tea

Apricots, sliced for garnish

Mint leaves, for garnish

APRICOT HONEY

In a small saucepan, combine 1 cup honey, 1 cup water and 1 cup of pitted and sliced apricots.

Bring to a boil and simmer for 5-10 minutes, until apricots dissolve. Depending on the ripeness of the apricots you may have to add more water.

Pour mixture through a fine mesh sieve and let cool completely in the fridge.

TEA

Pour 2 cups of hot water and add 2 teabags to a large pitcher. Let tea steep for 10 minutes.

Remove teabags and cool completely in the fridge.

TO SERVE

When ready to serve, add ½ cup of apricot honey syrup to pitcher of tea, adding more syrup to desired sweetness. Mix in sliced apricots and mint leaves.

Stir and serve over ice. Enjoy! OH
